Upcylcing Okara

Current research focuses on upcycling okara (soy residue waste) through solid-state fermentation. This involves exploring new ways to use okara as a substrate for fermentation, characterizing the metabolites produced during fermentation, and scaling up the process. The ultimate goal is to redirect this byproduct from the soybean industry into upcycled food streams.
